Guilt-Free Blueberry Muffins
Saturday mornings, guilt-free blueberry muffins and a vanilla lattè. It’s going to be a good day!
Ingredients
- 1c greek yogurt
- 1c oats
- 1c+ almond meal (filled to the top)
- 1 tbsp vanilla
- 1 tsp ground cinnamon
- 1c blueberries (I added a few blackberries too)
- A dash of salt
- 1 tbsp lemon juice
- 2 eggs
- 1/3c honey
Method
Pre-heat oven at 350. Mix everything up and pour into a muffin tin. All ovens are different, but I baked mine for 22 minutes. You want the top to be a little golden brown! Test with a toothpick. It should come out clean! Serves 1 dozen. 🐝
