Cauliflower Gnocchi
This meal is a regular in our house! Swap out the veggies, add mushrooms, bell peppers, spinach, whatever sounds good. If you want just a veggie sauce, then don’t add the beef to this recipe! Can’t wait for you to try.
Tip: Never follow the instructions on the back of the cauliflower gnocchi package. Follow my instructions for the perfect, CRISP gnocchi. :)
Ingredients
1 package of Trader Joe’s cauliflower gnocchi
1 jar of Rao’s pasta sauce.. (I used arrabbiata)
1/2 c carrots
1 c tomatoes
2 large handfuls of kale
1 lb lean ground beef
A sprinkle of red pepper flakes for extra spice if desired!
S & P as needed
Method
In a large sauce pan, brown and ground the beef for about 5-7 minutes. Add in the carrots, tomatoes and cook for a couple more minutes, then add the pasta sauce and reduce heat to a simmer. Let it cook for about 15-20 minutes to soak in all the flavors! Once you are ready to serve, add in the kale. It does not take long for it to wilt!
Heat 1 tbsp olive oil over medium high in a medium skillet. Once hot, add the cauliflower gnocchi! Make sure the gnocchi aren't touching each other. Do not touch the gnocchi for about 4 minutes—test one, flip it..if it is nice and brown, then flip all of them. If it isn’t quite there yet then cook for a little longer. Once they are brown, flip each gnocchi so that they are even.
