Cauliflower Gnocchi + Chicken

When I get in the kitchen I have an idea of what I’m going to make {thanks @pinterest for some inspo} but I never follow recipes. This is where I find my creative taste. Tonight I was excited about this meal but since it was a first time, I was kind of nervous about the outcome. It was a success and I’m so happy to share with you! 

Ingredients

  • 1 package @traderjoes cauliflower gnocchi 

  • 2 chicken breasts (cubed)

  • Mushrooms

  • Cherry tomatoes

  • Spinach 

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • S+P

  • Avocado oil

  • 1 tbsp ghee/ butter 

Method

Season chicken with onion powder, garlic powder and S+P! Drizzle avocado oil in a large skillet and heat on medium for a few minutes. Add in chicken. Brown each side for about 3-4 minutes, then remove from heat. Add butter to skillet and place frozen cauliflower gnocchi in. Cook for a few minutes on each side. Add in mushrooms and tomatoes. Cook for a few more minutes then add the chicken back to the skillet! Add spinach and cook for a few more minutes...sorry I am using that term a lot but I didn’t time each segment. It took 15-20 minutes total!
