Spaghetti & Meatballs

This is another recipe that has been passed down.. as I've mentioned before, my mom is THE BEST cook. I was lucky to have her as my own personal chef growing up. ;) I hope you enjoy these meatballs as much as we do! 

Ingredients

  • 1 lb lean group beef

  • 1/3 c Italian bread crumbs

  • 2 eggs

  • 1/4 c mozzarella

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

Method

Mix all ingredients in a large mixing bowl. Roll them into your desired size..or use an ice cream scoop. Heat 1 tbsp olive oil on medium high heat. Once hot, brown the meatballs, flipping every few minutes (they will lose the perfect circle shape most likely, but don't worry about it!) Once browned on all sides, reduce heat to low, add Rao's marinara sauce, cover and simmer for 30 minutes or 2 hours. Whatever you have time for! The longer they cook (ON LOW HEAT), the better they are in my opinion. This recipe works with ground chicken as well! (I don’t like ground turkey AT ALL but it will work with that too.)

For a lower carb option, use a veggie based spaghetti. I used POW, lentil! It was delicious.
