One Pan Chicken and Mushroom Risotto

Ingredients

  • 2 chicken breasts

  • 1 bunch broccolini—chopped

  • 1 c mushrooms

  • Trader Joe’s Mushroom Risotto

  • Sprinkle of onion powder, garlic powder and pepper

  • Olive oil

  • Minced garlic

Method

Heat a large pan with 1 tbsp olive oil over medium heat. Sprinkle the chicken breasts with garlic powder, onion powder and pepper. Add breasts to pan and cook on each side for about 5 minutes each (depends on the thickness.) Remove from pan and cut into pieces!

Add mushrooms and broccolini to pan..maybe add a little more olive oil if there isn’t much left! Cook for a couple of minutes. Add 1 tsp minced garlic! Once the mushrooms are sautéed and the broccolini is nice and bright green..add in the frozen TJ’s risotto. Add 2 tbsp of water and continue to stir and cook! Add the chicken back in to the pan. Once everything is cooked through it is ready to serve! Fancy, easy dinner in less than 20 minutes.

If you would like this to be meatless..just omit the chicken! :)
