Shrimp Pad Thai
If you don’t like shrimp, use cubed chicken breast! Follow the same instructions.
Ingredients
Stir Fry
1 package Pad Thai noodles
2 eggs
Shrimp (I used 12?!)
1/2 c peanuts
1 bell pepper
1/2 c scallions
1/2 c shredded carrots
Chopped cilantro
Lime
1 tbsp ghee
Sauce
1-3 tbsp sambal chili paste I did 3 and it was spicy just the way we like it!
2 tbsp water
1 1/2 tbsp rice vinegar
3 tbsp soy sauce/liquid aminos
1-2 tbsp honey
Optional-1 tbsp tamarind paste
Method
Cook the pad thai noodles according to the package. While that is cooking—in a large pan, cook the shrimp in about 2 tbsp avocado oil on medium high heat. Flip after about 3 minutes! Add in 1 tbsp ghee and the noodles . Toss them up with the shrimp a few times, push them over to the side and add two eggs. Scramble them up, let them cook for a few minutes before adding them in with noodles and shrimp. Add in the veggies, then mix everything all together! Add sauce, toss it up for a few more minutes. Then add your crushed peanuts! Top with chopped cilantro and lime!
Cook time: shouldn’t take more than 30 minutes?!
