Guilt-Free Pumpkin Muffins

Some may call it basic, but I call it good. I LOVE fall….pumpkin, fall decor, everything about it! Many people think Fall has already begun, but the season technically doesn’t begin until Sunday, September 23. I wanted to create a fall treat without the guilt.. I achieved it with these delicious muffins that could easily be made into pumpkin bread if you would rather that. I prefer muffins because I love the grab and go aspect. Now you will have a yummy treat to kickoff the season! Let me know what you think once you’ve made them.

Ingredients

  • 1 can 100% pumpkin

  • 1 c oats

  • 2 tbsp ground cinnamon

  • 1 tbsp almond meal

  • 2 tsp coconut butter

  • 1/4 c yogurt

  • 1 tsp vanilla

  • 2 eggs

Method

This makes a dozen muffins. Mix all ingredients in a medium mixing bowl. Spray your pan/muffin tins with non-stick spray to be safe (I don’t spray each individually cup, I just give the muffin tin, with the liners a good spray from a distance). Bake on 400 for 30 minutes. All ovens are different..check on your muffins periodically. If they look like they are cooked enough take them out, stick a tooth pick in and if its clean then you’re good to go!
