Maple Sriracha Salmon + Mashed Cauliflower + Broccolini

Sriracha Salmon

  • 1/2 LB Salmon 

  • 1/2 tbsp Sriracha

  • 1/2 tbsp Maple Syrup

  • 1/2 TSP Garlic Powder

  • 1/2 TSP Onion Powder

  • Salt + Pepper

  • Drizzle broccolini with olive oil and top with salt + pepper. Bake with the salmon for 20 minutes. 

 Mix everything in a bowl & glaze the salmon with marinade. I always rub it on the salmon to make sure the marinade covers all parts of the salmon! Bake on 400 for 20 minutes! These measurements are for 2 filets. 

Mashed Cauliflower

  • 1 bag of cauliflower pearls

  • 1 tbsp mozzarella 

  • Salt+Pepper

  • 1 tbsp Ghee (clarified butter)

You can either follow the directions on the bag to make their version of mashed cauliflower or you can choose mine. Heat 1 tbsp of olive oil and 1 tbsp ghee on medium high heat. Add the cauliflower pearls. Cook for about 8 minutes, stirring occasionally!Smash the pearls however you'd like..I use the KitchenAid immersion blender. Once smashed to your liking, add parmesan and stir! Voila! Just like mashed potatoes...but healthy. :)
