Flourless Banana Bread

Ingredients

  • 3-4 ripe bananas

  • 1/4 c maple syrup

  • 2 c rolled oats

  • 2 eggs (or 1 egg and a spoon full of greek yogurt..whatever you have on hand)

  • 1 tsp baking powder

  • 1 tsp pure vanilla

  • A dash of cinnamon

  • A sprinkle of salt

  • Choc chips (optional)

  • Walnuts (optional)

Method

Pre-heat oven on 350. Blend all ingredients on high for 1 minute or until you have a good consistency! Or use an immersion hand blender. Bake for 35-45 minutes or until a toothpick comes out clean! All ovens vary..enjoy!

For muffins, bake for 15-20 minutes.
