Berry Crumble

Berry Crumble

Breakfast or dessert? You be the judge! I take zero credit for this Berry Crumble. It is just tooo good not to share! Thanks to my good friend Lynden, for sharing this recipe on her Instagram a few months ago. It is so sweet, and savory!

Ingredients

FILLING

  • 6c frozen berries/cherry blend

  • 1/4c arrowroot starch

  • 3 tbsp lemon juice

  • 1/4c honey

  • 1 tsp vanilla

Crumble Topping

  • 2/3c rolled oats

  • 1 tbsp chia seeds

  • 3/4c almond flour/almond meal

  • 1/4c arrowroot starch

  • 1 tsp himalayan sea salt

  • 3 tbsp honey

  • 1/4 c coconut oil-chilled and cut into pieces

  • 2 tsp vanilla

First , spray your baking dish with a little bit of non-stick spray. Add all of the berries to a large mixing bowl, sprinkle the arrowroot starch evenly over the berries, being careful not to dump it in all at once, then add the remaining ingredients for the filling and mix well. Add the filling to the baking dish. 

Next you will put the oats and chia seeds in a mining bowl with the almond flour, arrowroot starch and sea salt. Mix well! Then add the honey and chilled solidified chunks of coconut oil. Stir to create a crumbly mixture. 

Sprinkle the topping evenly over the filling. Bake at 350 and until the juices are bubbling and its lightly browned on top. About 45 minutes, covering it in foil at any time if the top is getting too browned.
