Honey Glazed Salmon
Lets just say I’m already looking forward to making this recipe again! The flavors were so delicious. This recipe would definitely work with chicken too, it will just be longer cook time!
Ingredients For 2 Servings
2 salmon filets
2 tbsp raw honey
1 squeezed lemon or about 1 tbsp lemon juice
2 garlic cloves pressed or diced
Salt & pepper
1 tbsp olive oil
Method
Season the salmon filets with a good amount of pepper and a little bit of salt. In a medium skillet heat 1 tbsp of olive oil on medium heat. Once hot, add the salmon with the skin side down! cook for 4-6 minutes. In a small ramekin mix the lemon juice and honey. Add garlic and honey/lemon mixture to the skillet and flip the salmon. Cook for about 3 more minutes..the honey should be turning into a nice glaze! Once the time is up and the salmon is cooked, turn off the stove and spoon the glaze on top of the salmon. Enjoy!
I served with a farro + quinoa blend.
1/2 c farro
1/2 c quinoa
2 1/4 c water
Salt & pepper
Bring the water and blend to a boil. Reduce heat to a simmer and cover for about 20 minutes or until all of the liquid is absorbed!
