Huevos Rancheros + Fresh Salsa

 

Lets fast forward to the weekend and the delicious and easy brunch. It is my version of huevos rancheros!

The key ingredient is the homemade salsa..which is also my version of my grandma, Nena's amazing salsa recipe. 

Ingredients:

Salsa

  • 5 tomatoes 
  • 8 serrano peppers
  • 1/2 onion
  • 1 can tomato sauce
  • 1/2 tsp onion pwoder
  • 1/2 tsp garlic powder
  • salt 

Method

Sauce the diced onions on medium heat in about t tbsp of olive oil. Place the peppers and tomatoes in a food processor/blender/vitamix. Timing depends on how you like the texture of your salsa. Sometimes I puree it, but this time I kept it a little chunky. Add this to the sauce pan with the onions. Add the seasoning and can of tomato sauce. Simmer for a few minutes and then enjoy! 

Served with 2 eggs over medium, black ''refried' mashed beans, two corn tortillas and half and avocado. 

Refried beans: drain 1 can of black beans. Heat up a small skillet with a little scoop of butter. Pour beans in and heat on medium for 5-8 mins. Once bubbling, start mashing with a fork! To add some spice, add 1-2 tbsp of fresh salsa! 

Tortillas: I heated the tortillas up with some avocado oil to get them nice and crispy. 

*This salsa recipe makes about 6 cups of salsa* If you don't like hot salsa, de-seeed your serrano's and cut down the amount of peppers you put in!
