Veggie Frittata

Veggie frittata/crustless quiche/you name it, it is veggie packed and delicious! I whipped this up yesterday morning for my in-laws who visited us this weekend. I was pleased that it turned out! Anyone else decide to try things on people and hope for the best?! πŸ€”πŸ₯΄πŸ˜‚ There were no leftovers so that’s always a good sign. β €
Ingredients:
8-12 eggs
1 diced bell pepper
1/2 c diced onion
1 Zuchinni
1/2 c mushrooms
2 slices of diced bacon 
Shredded cheese *optional*
Olive oil
Minded garlic
Salt
Pepper

Method:
Pre heat oven to 350. Add the bacon to a large pan. After a couple minutes of cooking add the veggies. Cook for a couple more minutes add in about 2 tsp minced garlic. Stir and cook for a total of about 10 minutes or until the veggies are tender!

In a mixing bowl, whisk the eggs.. add a sprinkle of salt and a lot of pepper (if you love pepper like me). πŸ€·πŸΌβ€β™€οΈ

Spray baking dish well with non stick spray- add all of the veggies. Sprinkle some cheese & then pour the eggs on top. Pop in the oven for 25-30 minutes and enjoy!!

I only used 8 eggs in this picture but I think there is room for more!
