Juicin' & Healthy Carrot 'Cake'
The Medical Medium recommends drinking 16 oz of pure celery juice every morning, on an empty stomach! Yes..before coffee, before anything. I've gone through phases of drinking it but not consistently. Join me starting this Monday, 8/13 with this challenge.
One thing I struggled with while juicing at home is wasting all of the pulp. I have tried different things in the past, baking the pulp etc. Nothing ever turned out quite like I envisioned. I am so glad that I finally sound something that worked! (Not for the celery pulp but for my carrot, turmeric, lemon & apple juice.
Ingredients for Celery Juice
- One large bunch of celery
Ingredients for Carrot Juice
1 package of whole carrots
1 tbsp tumeric
1 lemon
1 apple
Method
If you are using a juicer, simply put all the ingredients in the juicer (besides the lemon which I just squeeze). If you are using a blender, blend on high for a minute and then use a strainer to collect the pulp.
Carrot Cake
- 3 c carrot pulp
- 2 c unsweetened coconut flakes
- 1 tbsp ground cinnamon
- 1 c chia seeds
- 1/4 c honey
Combine 3 cups of carrot pulp, 2 cups of unsweetened coconut flakers, 1 tbsp ground cinnamon and 1 cup of chia seeds and 1/4 cup of honey, syrup or agave in a large mixing bowl (I used honey). Once mixed well, pour into a baking dish (no baking required). Spread the mixture evenly. Before refrigerating I recommend cutting the bars. If you don't, it will just make it more difficult to cut!
