Shrimp Skewers

Shrimp Skewers

Ingredients

Amounts depend on how many you are cooking—I cooked for two and bought 12 shrimps, and 5 scallops from the seafood market we go to.

  • Shrimp

  • Scallops

  • Veggies

    • I used, bell peppers, onions, zucchini

  • 1 tbsp Trader Joe’s Chile + Lime seasoning

  • 1 tbsp minced garlic

  • 3 tbsp olive oil

  • 1 tsp pepper

Method

  1. Soak the skewers in water

  2. Heat cast iron on medium/or skillet/ or grill them!

  3. Assemble the skewers to your liking

  4. Brush the skewers with the marinade ( I only did one side and then when I placed in the cast iron, I placed marinated side down and brushed the other side.)

  5. Place them in the cast iron and cook on each side for about 3 minutes each—a total of 6 minutes..they should be done after that! Everyones stove/grill is different. You know the shrimp is ready when they have a nice pink color to them!

I paired with my veggie risotto and it went perfectly together!

Also—if you don’t like seafood, you could do this with chicken or beef too!
