Veggie Bowl

Add this delicious veggie packed bowl to your meatless Monday options!

Ingredients

  • Kale

  • Red bell pepper

  • Black beans (or any bean)

  • Cherry tomatoes

  • Sweet potatoes

  • Brown rice (I used @traderjoes frozen brown rice-steam in bag)

  • Onion powder

  • Garlic powder

  • Pepper

  • Olive oil

Method

Heat 1 tbsp olive oil in a large skillet. Once hot, add kale! Season with a little onion and garlic pepper. Cook for about 5-7 mins until the kale is crispy!

Microwave sweet potato for 3 minutes. Let it cool for a couple of Minutes. Let it cool..then cut in half and then peel the skin right off! Chop the sweet potatoes into quarters. Heat olive oil over medium heat. Add the sweet potatoes, bell peppers and tomatoes. Cook for a few minutes until nice and crisp! Add in black beans and heat for a couple more minutes.. then prepare the brown rice. Assemble bowl and voila!
