Rotisserie Chicken Bowl

Ingredients

  • Tri-color quinoa (I cooked 1c and used throughout the week) 
  • 1/2 avocado
  • Broccoli
  • 1 sweet potato
  • Rotisserie chicken

Method

If you follow my Instagram, you probably know by now that rotisserie chicken is a staple in my refrigerator. I use it for various recipes throughout the week. Chicken tacos, bowls, chicken pasta etc! Super convenient and delicious! 

Cook the quinoa according to package, all I add is a little bit of salt and pepper. On a baking sheet, bake the broccoli and sweet potatoes on 400 for 20-30 minutes (peel and cut the sweet potato and then heat in the microwave for 5 minutes to give it a little kickstart)! 

I drizzle the broccoli with olive oil and don't add anything to the sweet potatoes! 

Heat up the chicken in the microwave for a minute. Once everything is cooked add into a bowl and enjoy!
