Skinny Biscuits & Berry Jam

This recipe I just created is toooo good not to share right away! Cannot believe how delicious and easy they were. I had seen healthy biscuit recipes before that called for cream cheese. I don’t have any cream cheese and thought..I have ricotta cheese so let’s try that. I love lemon ricotta pancakes so I thought maybe this will turn out. Sure enough, it did! So tasty, cannot wait for you to try. Tag me in your creations!

Biscuit Ingredients:
2 c ALMOND flour
1/2 tbs baking powder
4 tbs butter
3 eggs
1/2 c ricotta cheese (sounds weird, trust me though-makes them SO FLUFFY AND DELICIOUS!)
Salt

Method:
Preheat oven on 350. Combine dry ingredients, then wet (melt the better). Mix until everything is combined!

Spray baking sheet with a little non stick spray. Use a ice cream scoop to drop them on sheet! Cook for 15-20 minutes. The top will start to get a little crispy.

Berry Jam:
Sorry no measurements..
Strawberries
Blueberries
Blackberries
Lemon zest
Lemon juice
2 tbs raw honey

Cook on medium heat, with the lid on, stirring frequently for 10 minutes. After 10 minutes, mash the berries. Let it cook for another 10 minutes. Serve warm or let it cool in the fridge!
